Tuscan Butter Shrimp

Tuscan Butter Shrimp

Quick and easy skillet meal

ingredients:

2 tablespoons Olive Oil
1 pound shrimp peeled, deveined, and tails removed
Kosher Salt
Freshly ground pepper medley
3 tablespoons butter
3 cloves garlic - minced
1 1/2 cups cherry tomatoes - cut in half
2 cups baby spinach
1 cup heavy cream
1/4 cup fresh grated Parmesan Cheese
1/4 cup basil - thin sliced


instructions:

In a large skillet over medium-high heat, heat oil. Season shrimp with salt and pepper. Add shrimp and sear until underside is golden. (about 2 minutes.) Flip until opaque. Remove from skillet and set aside.
Reduce heat to medium and add butter.  When the butter has melted. sit in garlic and cook until fragrant - about 1 minute.
Add cherry tomatoes, season with salt and pepper. Cook tomatoes until they are beginning to burst.
Add spinach and cook until spinach is beginning to wilt.
Stir in heavy cream,  parmesan cheese, and basil - bring mixture to a simmer. Reduce heat to low and simmer until sauce is slightly reduced - about 3 minutes.
Return shrimp to skillet and stir in to combine. Cook until shrimp is heated through.
Optional: Squeeze lemon on top before serving
