Spend Well - The Budget Envelopes

Budgeting using the envelope system has been around for decades. Then Dave Ramsey came up with his system. I've tried several myself and then in 2019, I decided to really take it seriously. I was using my own kinda flimsy system. I wanted something simple and there are hundreds out there I knew I wouldn't stick with. There was always some annoyance (excuse) and I'd give up.


I stumbled on this Spend Well system.  Unlike the many other systems,  it's handmade and that's a plus for me. Extra stickers are provided so you can use it over and over, just slap a new sticker on a new goal or a new year or whatever...

 It's simple, you make the rules. That won me over.

I don't use these budget envelopes for everything this because I like the convenience online banking and bill paying. What I found was money I was putting aside in my bank account almost always got commingled with money for bills. I didn't want another bank account.

 Also, provided are a few extra goodies you can download.
So far so good for me!

Apple Pear Crisp



Apple Pear Crisp


ingredients:

  • 2 pounds apples (6 apples) I use a mix Granny Smith and Jazz
  • 2 pounds ripe pears (4 pears)
  • 1 teaspoon grated orange zest
  • 1 teaspoon grated lemon zest
  • 2 tablespoons freshly squeezed orange juice
  • 2 tablespoons freshly squeezed lemon juice
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
Topping
  • Topping:
  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar, lightly packed
  • 1/2 teaspoon kosher salt
  • 1 cup quick cook old-fashioned oatmeal
  • 1/2 pound (2 sticks) cold unsalted butter, diced

instructions:

  1. Preheat the oven to 350 degrees (F).
  2. Peel, core, and slice thin. I prefer slices but you can chunk this as well.
  3. Place the apples and pears in a large bowl and add the zests, juices, sugar, flour, cinnamon, and nutmeg.
  4. Pour into a 9" by 12" baking dish.
  5. Make the topping:
  6. Combine the flour, sugars, salt, oatmeal, and butter in the bowl.
  7. Mix on low speed for until the mixture is in large crumbles.
  8. Sprinkle evenly over the fruit, covering the fruit completely.
  9. Bake for 45 minutes to 1 hour, until the top is brown and the fruit is bubbly.
  10. Add additional time if you chunk the fruit.
  11. Service with Vanilla Bean Ice Cream

Watermelon Feta Cheese and Red Onion Salad



Watermelon Feta Cheese Salad

ingredients:

  • 1/2 large chilled seedless watermelon, cut into 1-inch cubes
  • 1 small red onion, sliced
  • 1 cup thinly sliced fresh basil leaves
  • 1 cup chopped fresh cilantro
  • 1/2 cup minced fresh mint leaves
  • 2 limes, juiced
  • 1 (4 ounce) package crumbled feta cheese
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar, or more to taste
  • salt and ground peppercorn medley to taste

instructions:

  1. Gently toss watermelon, onion, basil, cilantro, mint, lime juice, feta cheese, olive oil, balsamic vinegar, salt, and black pepper together in a large bowl.
  2. Served cold

Benefits of Peppermint

Think about growing mint indoors - so it's readily available.
Select a wide surfaced container such as a window box and fill with well-drained potting soil.
Place your mint plant indoors in a bright, sunny room with temperatures over 60 degrees.
Keep your mint plant watered and moist.

French Canadian Meat Pie (Tourtiere)





Tourtiere: A French-Canadian Meat Pie


ingredients:

  • 2 pounds ground pork
  • 1 1/2 cups cold water
  • 1 cup onion, finely chopped
  • 1/2 cup celery, finely chopped
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried savory
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon grated nutmeg
  • Pinch cinnamon
  • Salt to taste
  • 1 cup old-fashioned rolled oats
  • Pastry for double-crust pie (9 inches)

instructions:

How to cook Tourtiere: A French-Canadian Meat Pie

  1. In a large, heavy frying pan, over medium heat, add pork and water, and heat to boiling point. 
  2. Add onion, celery, pepper, savory, rosemary, nutmeg and cinnamon. 
  3. Cook, covered, over low heat for one and a half hours, adding more water if the mixture dries out.
  4. When the mixture is ready, season with salt to taste. 
  5. Stir in rolled oats and cook, stirring, for two to five minutes.
  6. Preheat oven to 425 F.
  7. Line a 9-inch pie plate with the pastry. When the meat mixture has completely cooled down, spoon it into the pie shell and cover it with the remaining pastry. Trim pastry, seal the edges and cut steam vents in the top of the crust. Decorate with pastry cutouts as desired. Bake in the preheated oven (at 425 F) for 15 minutes. Then, reduce heat to 375 F, and bake another 25 minutes — or until crust is golden.
  8. Egg Wash five minutes before removing from oven, optional.
